The fair is aimed at professionals, and brings together nearly 150,000 people for four days.

The visitors come from over 140 countries and they include importers, distributors, and staff who work in the restaurant, catering and hotel industries. They attend exhibitions, seminars and conferences. . The basic aim of the fair is to serve as a business hub, and a laboratory for creative ideas for all professionals involved in the food industry.

Alimentaria is organised into various monographic fairs dedicated to drinks, frozen food and sweets, among other products. The fair also includes a culinary area where around fifty top Spanish chefs teach master classes and new cooking techniques.
